We must be honest. This recipe is for 95% based on a Grenade recipe from the #GrenadeBakeOff challenge. You know we love our brownies, so why not give these vegan ones a try? And yes, they taste as good (or I would say, even better) than regular ones. So, make your mommy proud, and bake her a portion of vegan brownies. We promise, the cows and your mom will be grateful!
- 30gr coconut flour
- 50gr cocoa powder
- 30gr melted coconut oil
- 100gr dairy free yoghurt (we used Alpro Soja Yoghurt)
- 2 table spoons sweetener (e.g. Stevia)
- 2 table spoons chia seeds soaked in 6 table spoons of water
- 1 table spoon of peanut butter
First, before you do anything else, soak the chia seeds in the water and leave for at least 30 minutes. In the meanwhile, preheat the oven to 175°C and prepare your baking tin (8x8 inch) with baking paper/parchment.
After 30 minutes, blitz all the ingredients (including the soaked chia seeds) in a blender until smooth. We just mixed it up with a spoon, so the chia seeds still have a crunchy bite when the brownies are baked!
Pour the mix into your baking tin and bake for about 25 minutes (or until a skewer comes out clean). Leave to cool before removing from the tin. You should be able to get 6 big brownies out of this mixture.
Finally, top these off with a good drizzle of (melted) peanut butter. Give the cows a rest and eat these vegan brownies!
