Healthy banana pancakes with only 3 ingredients

It always feels like a party when pancakes are on the menu. Serve these banana pancakes and the party is complete since these are healthy and easy! These pancakes only contain 3 ingredients, so the preparation time takes about 2 minutes, and the baking itself 10 minutes. You do not need to be a chef to put these pancakes on the table in no time!

We must admit that we made these as a cheat meal, using (a lot of) peanut butter and (healthy) chocolate spread. (Looks better on a picture too!).

Of course these can be served just by itself, (maybe seasoned with cinnamon?), or topped with other healthy ingredients such as Greek yogurt, fruit, almond nut butter, etc. The options are endless!

Ingredients for the pancakes

  • 2 (ripe) bananas
  • 2 eggs
  • ½ teaspoon of baking powder

Ingredients for the topping

  • 1 tablespoon peanut butter (Natural Peanut Butter from Body & Fit)
  • 1 tablespoon chocolate spread (Carb Killa Milk Chocolate Protein Spread)
  • ½ Carb Killa Chocolate Crunch bar

Recipe

Smash 2 bananas in a bowl. When your bananas aren’t ripe enough, cut them into little pieces. It will help you smash it more easily. Add 2 full eggs into the same bowl and start mixing the bananas and eggs. Whisk in half a teaspoon of baking powder.

TIP: the baking powder is what makes the pancakes rise, and therefore fluffy! If you do not have baking powder, you can leave it out of this recipe. The banana pancakes will be just as delicious, no worries!

Now everything is mixed up, we can start baking! Heat up a pan and add some butter or cooking spray. We use PAM spray, since it’s a healthier option than butter.

Use a tablespoon to drop the batter into your heated pan. Let it set for about 2 minutes, and then flip the pancake with a spatula. Let the other side brown for 2 minutes.

TIP: We made 6 little pancakes with this batter. You could also bake 1 or 2 large pancakes, which will save you some time!

Now the pancakes are done, put them on a nice plate and start decorating! We made a little ‘tower’ of pancakes, with alternating peanut butter and chocolate spread in between. Chop your Grenade Carb Killa Chocolate Crunch bar (or any other flavour) and use half of it to top your pancakes.
