You guys and girls all know by now that Alpha Bears like us really need their daily portion of coffee. The Carb Killa White Chocolate Mocha bar is the perfect snack to combine with a big mug of strong coffee. But what do we like even more? Yes, cake! These coffee protein cupcakes are the perfect combination of strong coffee, protein sweetness and cupcake texture. This is the perfect afternoon snack!
- 100gr almond flour
- 1 scoop coffee whey (Ghost Coffee Ice Cream)
- 8gr baking powder
- 4gr of vanilla sugar
- 60ml milk
- 1 shot of strong coffee (+/- 4 ml)
- 60gr of light Greek yoghurt
- 1 egg
- Garnish: 1 Carb Killa White Chocolate Mocha protein bar
- PAM spray
This recipe is surprisingly easy.
Preparation is key, so preheat your oven at 180° Celsius and start spraying your cupcake (paper) moulds or muffin tin with PAM spray. You’ll never believe it, but that was actually the hardest part!
Take a bowl and mix together all the dry ingredients (almond flour, whey, baking powder and sugar). You can leave out or add more sugar, depending on your sweet tooth. Once that’s done, add all the wet ingredients (milk, coffee, Greek yoghurt and egg) and whisk everything together until you have a smooth mixture. It's normal if it still looks a bit granulated, because that’s just the texture of the almond flour.
Take a spoon and scoop the mixture into your sprayed moulds. You should be able to get 8 small or 6 large cupcakes out of this batter. We made 6 big ones, obviously ;)
TIP: If you want to go wild, press a piece of protein bar into your mixture!
Bake these coffee cupcakes for 15 to 20 minutes in the oven at 180° Celsius. In the meanwhile, cut the Carb Killa White Chocolate Mocha bar into small pieces. Once the cupcakes are finished, let them cool before topping of with the protein bar pieces. (Or garnish while the cupcakes are still warm, so the white chocolate start to melt. Mmm…)
Tip: If you’re an extreme sweet tooth, you can also garnish these cupcakes with coffee icing. To make the icing, mix icing sugar and coffee until you get your preferred texture (thick or runny). Add the icing once your cupcakes are cold, otherwise the icing will start melting off your cupcake.
